Ingredients
2-3 large Byler’s Relish House Pickled Beets
1 can chickpeas, drained and rinsed (or swap in 1 cup soaked cashews or steamed cauliflower for a bean free option)
1/4 cup extra virgin olive oil
2 tbsp tahini
3 cloves garlic
1 lemon, juiced and zested
1 tsp cumin
salt and pepper, to taste
1/4 – 1/2 cup filtered water, as needed for smoothness
Directions
Add all of the ingredients (except water) into a food processor or blender.
Blend until smooth.
Add water, 1 tbsp at a time, as needed to keep blending.
Remove and put in a dish to serve.
Serve with fresh veggies, crackers, pretzels, etc.
